When one has leftover rice from Indian curry what does one do with it? One simply takes it and turns it into a new twist on a proven yet delicious Asian delicacy!
(Not recommended for those with peanut and any other nut allergies)
Here’s how I made it:
1-in a hot oiled pan, add chopped bacon then cook until BACON is cooked and crispy
2-add corn, carrots and onion then cook until corn is tender, carrots are soft and onions are transparent
3-in the centre of pan and crack open two eggs, then whisk eggs in centre and after mix together into veggies
4-add rice into pan, reduce heat to medium and stir until BACON, veggies and egg are combined
5-add 2tbsp peanuts, 1/4 cup peanut butter, 1tbsp hoisin sauce, 1tbsp soy sauce, 2tsp ginger powder, 1tbsp minced ginger, 2tsp garlic powder, 1tsp onion powder and 2tsp sesame seeds then stir until all ingredients are combined
6-serve and enjoy!
