Low Sugar Parfait Cups

Having diabetics in the family makes making holiday treats that everyone can eat a real chore. But I managed to come up with a slightly better alternative for that sweet tooth this year for the 4th.
What You'll Need:
-1, 6 oz box of sugar free strawberry Jello
-1, 6 oz box of sugar free berry blue Jello
-2, 1 oz boxes of cheesecake pudding Jello
-strawberries
-blueberries
-milk (sadly, all milk contains sugar. I used 2%)
-sprinkles (optional, sprinkles contain corn syrup)
-8 clear 5 inch plastic cups
Step 1:
Wash the strawberries and chop them into small pieces making sure to cut off the stem caps. Chop about 3 or 4 to each cup. Place chopped strawberries at the bottom of each cup.
Step 2:
Boil 2 cups of water, add the strawberry Jello packet, whisk for 2 minutes, add 2 cups cold water, stir. Then carefully pour equal amounts of Jello liquid into each cup. (I didn't use a precise measurement, just use your best judgement until they're about all even.) Place all 8 cups in the fridge and let chill for at least 3 hours.
Step 3:
When the red layer has completely solidified, add a handful of blueberries on top of it for each cup.
Step 4:
Repeat Step 2 for the berry blue Jello.
Step 5:
After another 3 hours, make both packets of cheesecake pudding in a large bowl. Let sit for at least 10 minutes.
Step 6:
After 10 minutes, stir up the pudding with a spoon and add your final layer to the cups. Try to distribute it as evenly as possible by shaking the cups a little. I'd say about 3 heavy spoonfuls per cup. Top with some more cut up strawberries and/or blueberries, also sprinkles if you so desire.
