Razorwulff's Gnocchi with Roasted Red Pepper Coulis {V}

Nom-nom gnocchi sitting in a sensational sauce from the kitchens of
razor_wulff
Quick, easy, vegetarian!!
For 2 servings:
1/2 lb. of potato gnocchi (either packaged or fresh made*)
2 red bell peppers
2 cloves of garlic
salt
black pepper
approx. 1/4 cup extra virgin olive oil
Roast the bell peppers either on the bbq or on the gas burner of your stove. Remove the charred skin, stem, and seeds. Set aside. CAREFUL...the pepper flesh will be HOT.
Prepare gnocchi as directed.
To make the sauce, add to the bowl of a small food processor (I used the Ninja for this): the red peppers, the garlic, and about 1/4 cup of olive oil. Blend until smooth. Season with w/ salt and black pepper.
Toss the gnocchi with the sauce in a medium sauce pan over medium heat to warm through.
Serve immediately.
In the picture, I garnished with parsley, grated pecorino, and black lava salt from the island of Cyrpus.
