Shout out to Gorlak's creator LandSharkRAWR for telling me that it was possible to make this due to cartoon physics.

Gorlak has an amazing-looking nose, I'm just gonna be forward with it. If he doesn't sniff in the game, the only reason I won't say "he should" is because I haven't played the game yet (or even looked up a walkthrough) and it would be unfair of me to say that something should be in a game I haven't interacted with aside from seeing a few pieces of art of, official or fan.

But even so, since I've seen the creator's "Gorlak Alive" art in which the fully formed version of him has slit nostrils instead of these gigantic nares, I can only imagine how much better Gorlak's sense of smell is now that he's a skeleton and his nostrils are unrestrained by his former skin.

But enough about my thoughts on his nose's design. Here's a gif of Gorlak sniffing up close with those giant, flaring, boney nostrils of his. Hope he smells something good enough that encourages him to keep sniffing for a good, long while.
