Not my own. This was a recipe my gf shared with me on Instagram that quickly became a very easy breakfast that's too good not to share.
What You'll Need:
-1 tube of cinnamon rolls
-2 eggs
-1 cup of heavy cream (or milk)
-1 tablespoon cinnamon
-1 tablespoon vanilla extract
-1 cup of blueberries
-Small baking dish
Step 1:
Start by preheating your oven to 350 degrees and spraying your baking dish down with cooking spray.
Step 2:
Remove the icing from the tube of cinnamon rolls and set aside. (I will typically just place it on top of the stove so it melts and I can just drizzle it on top.) Next, cut all the cinnamon rolls into quarters and equally distribute them throughout the pan.
Step 3:
In a separate small bowl, crack 2 eggs and add the cream/milk, cinnamon, and vanilla extract. Whisk together with a fork until nice and creamy, then pour over the cinnamon rolls. Followed by sprinkling the blueberries on top.
Step 4:
Place the pan in the oven for 20 to 30 minutes until golden brown. Keep a good eye on them as cinnamon rolls burn very easily. When finished, remove from oven and drizzle the icing on top. Allow it to rest for at least 7 to 10 minutes to solidify just a bit and enjoy.
