Ingredients!
(Oh, I used to dream of food what had Ingredients in it when I were a lad . . . )
1 3/4 cups all-purpose flour
3/4 cup yellow corn meal
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt (optional)
1 cup skim milk
1/4 vegetable oil
1 beaten egg (yes, beaten; it knows what it did)
1 teaspoon Old Bay seasoning
1 cup grated Cheddar cheese
1 cup sliced green onion
METHOD?
1. Preheat oven to 400F (204C)
2. Mix all the ingredients together and spoon it into a greased muffin tin or paper muffin cups
3. Bake 15 to 20 or until golden brown
Verdict: Still scratching my head a little about these. I might have overcooked them a bit as they came out chewy and stuck to the muffin papers. I'll do better next time.
