I was meaning to get around to this for the past week or so
Remember that stale bread is ideal for this, so you may want to prep the bread in advance
This is also something of a 'blank slate' recipe. I encourage you to add your own things to it. In my case, I went for some grated chocolate over top.
Recipe (serves 6-8)
400g Loaf of Brioche
400ml Whole Milk
4 Eggs
50g Soft Brown Sugar
25g Butter
(additionally - Chocolate Chips, Sultanas, Raisins ect.)
1. In advance, start by slicing and cutting your loaf of Brioche into rough 1" cubes and leave them out to go stale; this may take two or three hours. Once that's done preheat your oven to 180*C (350F), grease a large baking dish with the Butter and add the cubed Brioche.
2. In a large mixing bowl or measuring jug, combine the Milk, Eggs and Soft Brown Sugar using either a whisk or an immersion blender until there are no streaks of egg and you're left with a raw, eggy custard.
3. Pour the mixture over the Bread and gently toss it to coat everything in the raw custard. Don't be too rough or the Bread will start to break down. This is around the time you'll want to add anything else you want to the pudding. Chocolate Chips, Sultanas, or a sprinkling of Sugar over the pudding to get a crispier top layer.
4. Transfer the pudding to the oven and bake for 35-45 minutes, until the pudding is crisp and golden brown on top. Cut and serve with an accompaniment of your choice; Maple Syrup, Cream or Custard would be my recommendations.
