A cocktail of my own design (at least I hope this exact drink doesn't already exist under a different name) that I've been working on for a while now. It's like a pina colada cranked up to 11. So of course this had to be my official "Pineapple Summer."
What You'll Need:
-Cream of coconut. You can find this on the alcohol aisle in the mixers section. Typically comes in a can or a squeeze bottle. Go for the squeeze bottle. It's much easier.
-pineapple juice. 100% juice
-2 shots of Bacardi coconut rum
-2 shots of orange curacao
-1 shot of Jameson whiskey
-maraschino cherries/pineapple chunks (optional)
-cocktail shaker
-ice
Step 1:
In the cocktail shaker full of ice, add in 2 squirts of cream of coconut. I don't measure often so I'd say about 2 or 3 shots worth for an approximate amount.
Step 2:
Add the shots of Bacardi, orange curacao, and Jameson to shaker.
Step 3:
Fill shaker nearly to the top with pineapple juice.
Step 4:
Lid the shaker and shake well. And I mean really shake that thing up like it owes you money for a good minute.
Step 5:
Remove shaker lid and strain into 2 hurricane glasses.
Step 6:
Remove shaker top and you should be left with a bottom full of foam. Gently pour the foam right on top
Step 7:
Garnish with a cocktail toothpick poked with maraschino cherries and/or pineapple chucks and rest on top.
Enjoy and get wasted!
