Of course Roko is always super hungry. I knew that he would eat all of the soul, lol. Hopefully Roko doesn't eat too many souls at once that he explodes. I may be wrong but I have a feeling that it could happen to Roko in the future if he continues to be greedy and eat too many souls at once, haha. XD

That’s right, Roko never showed that he could eat souls in front of Brand and Saida. They wouldn’t have even seen Roko eating “dead” souls in the forest, because they can’t see the “auras” of souls like Roko can, so they wouldn’t know unless Roko told them, and it’s more likely that Roko hadn’t thought it was important to tell them about something they didn’t need to know about.
My theory (and I am far from the only one) is that he craves souls because, being a yōkai, he can't die the ordinary way. But he must have a vessel or the Reapers take him to the Other Place. That balloon can't be all that comfortable, and worse, he's modelocked in it, something that would be absolutely suffocating to a shapeshifting kitsune.
So he's collecting as many souls as possible to try and use their spirit energy to build himself a new body. Kind of a respawn-by-leveling up strategy. That it makes him an absolute horrorbeast is just a side benefit, apparently.

When Roco, that's when he found his original body, dead and washed up on the beach, although he entered it, he was no longer able to fully revive it. And when Saida saw how terrible he looked, she accidentally burned his body to ashes out of horror... and so apparently Roco has no choice but to try to create a new functional body for himself.

I think Roko is sucking up souls to build up energy, but I don't think he really has any sort of plan yet. It was just something that felt good when he did it and feels better the more he does. Which seems to be Roko's general habit.

But it’s not necessarily like Roko’s looking for trouble. The only reason most of this started was because Roko wanted to repay Brand for saving his life (even though that’s a moot point now). To that end, Roko brought Brand an “forgotten” offering, and even when that backfired, he took a chance, and appealed to the quetz, even at the risk of “divine punishment”. He even managed to convince Saida to use the Orb to return Brand’s wings, even though there was nothing to gain for Roko.
(Yes, he was at risk of losing his tails, but Roko hadn’t considered that before asking Saida, so Roko still had nothing to gain after Brand got his wings back in Roko’s initial plan.)

Don’t forget the description of Bottlenose’s character on pg. 242. He was originally described as “defiant”, so it’s possible that Bottlenose was originally that aggressive before Darya broke him. Given that the Bottlenose we saw before was nothing but a husk, we can’t assume that he was a good dolphin just because he was against Darya. Even Darya’s own “minions” weren’t necessarily happy with her, but they also tried to steal from Darya, and that clearly wasn’t for some noble purpose.
