You've never made crawfish or shrimp jambalaya? If I understood Justin Wilson correctly, you can make Jambalaya with any kind of meat.

Something like ohn-yohn. I became a fan of Justin Wilson back in 1974 or '75 when I found WWL on my AM radio back when I was working the graveyard shift. Back then, they would sell LP albums over the air. I heard a story being told by a man who had the funniest accent I had ever heard. I bought the album ($5.99 + $1.00 S&H) and played it until I almost wore the groves off it. LOL. I learned how to speak Cajun because of it, too.

Just discovered this - his show, Justin Wilson's Easy Cooking, appears on the RFD-TV channel every Saturday afternoon at 16:30 ET.
Better yet, they brought back Hee Haw at 19:00 ET.

Back when my mom was still alive, we had satellite/cable and our package had the RFD-TV channel. My mom would watch Justin Wilson and Hee Haw every time it came on. I used to come out of my room to watch those shows with her. (I could have watched them in my room but my mom being elderly (80s) really enjoyed the company.)
