This delightful greek style cake will no doubt tickle the tastebuds from the kitchens of

Made for Valentine's Day, even though I can't actually give it to anyone because it's too delicious to let go. This is a Greek semolina cake, soaked in syrup.
Ravani Recipe
The Cake:
1 cup flour
3 tsp. baking powder
1 cup fine semolina or farina
1/2 cup unsalted butter (eq. 1 stick)
1 cup sugar
3 eggs, separated (reserve whites)
1 tsp vanilla extract
zest of 1 lemon
1 cup milk
pinch of salt
The Syrup:
1.5 cups sugar
1.5 cups water
zest of 1 orange
1 tsp lemon juice
The Garnish:
Powdered sugar, ground cinnamon, sesame seeds and/or almonds
Preheat oven to 350 F.
Oil bottom and sides of a 9 x 13 baking pan. Line with parchment paper if you have it (always makes removal easier), and set aside.
Mix the flour, semolina, and baking powder together in a medium bowl.
Cream the butter and sugar together until light and fluffy, then add egg yolks in one by one and continue mixing until lemony in colour. Add vanilla and lemon zest at this time and mix well. Mix in the flour mixture and milk, alternating each until bit by bit.
Beat egg whites with a pinch of salt until soft peaks form. Using a wide spatula, folw the egg whites into the batter until just blended. Do not overmix or you will make the whites fall.
Pour batter into the 9 x 13 pan, level with spatula, and bake at 350 F for 45 minutes or until golden in colour.
While the cake is baking, make the syrup:
Start with a simple syrup (equal parts sugar and water) and bring to a boil. Reduce heat then add the orange zest and let it simmer for 5-6 minutes. Remove from heat, add lemon juice, stir, and set to cool. Once cooled, strain the syrup before use.
While the cake is still warm from the oven, cut into diamond or shapes, then slowly pour the syrup over the cake, letting it soak in. When the cake cools, sprinkle with desired garnish, or, if using almonds, place a single almond in the centre of each piece.
