Colurful and bright a devine and yummy cake from the kitchens of
KashmirDreams How appropriate that it was the
FACCC's birthday this week too.
This is a birthday cake I made for my friend
rexington for his birthday a few months ago. I was SOOOO excited for him to cut it because on the outside you couldn't tell it was rainbow :3 (I MADE DAMNED SURE OF THAT X3). I just thought I'd share with you guys :3.
Also, I want to try this in cupcake form eventually! :3
HOW TO MAKE YOUR OWN RAINBOW CAKE!
You Need
1 Box of White Cake Mix and ingredients for it
Water or Milk (water highly recommended)
Crisco Shortening (in the can)
Powdered Sugar
Vanilla Flavoring/Extract (or other desired flavor such as Almond)
Jel Food Coloring (liquid is highly discouraged)
Tools
2 Big Bowls
1 Large Spoon
6 Small Bowls
6 Regular Spoons
1 Mixer
1 Icing Spreader (aka knife)
2 Round Baking Pans
Cake
Take the box of white cake mix and combine ingredients as recommended on the box in a big bowl. Not a biggie. You can hand mix or use the mixer, but you'll need the mixer later too. Just make sure there are no lumps!
Preheat your oven to the recommended temp that's on the box.
Take the 6 smaller bowls and lay them out. Pour the white cake mix evenly into all 6. Give each it's own spoon, then begin to add your coloring. Each bowl has it's own color. One red, one orange, one yellow, one green, one blue, and one purple. Add sparingly because remember, you can always add color but you can't take away color! Mix each bowl with it's individual spoon and add additional coloring as needed.
Use the Crisco to coat the baking pans to ensure the cake comes out of it smoothly.
Pan 1
Take red, add most of it to the first pan, but make sure to leave some! Take the orange and pour it in the center of the red, but make sure to use less orange than red. Take the yellow and pour it into the center of the orange, adding less of it than the orange. Continue adding less and less of each color until you reach purple and have a great deal of purple left.
Pan 2
Take the purple and add all of it into the pan. Take the blue and add all that you have left to the center of the purple, which should be less. Add the green to the center of the blue, which should be less than blue. Continue on until your completely out of batter.
*TIP*
If you get the cake batter off center or if it doesn't spread all the way to the edges of the pan, pick it up and gently tap the side until it spreads out evenly. You may want to do this anyway so your cake isn't lop sided. DO NOT STIR IT!
Place into the oven and bake as box recommends. When it comes out of the oven the colors won't seem as bright as they should be, but no fear! They are on the inside! :3
Icing
2 TBS water or milk (water highly recommended)
1/3 cup of Crisco Shortening
2 Cups of powdered sugar
1-2 TSP of Vanilla flavoring/extract (or other desired flavor)
Combine 2 TBS of water or milk and 1/3 of Crisco Shortening to a bowl. Also add your flavoring here, 1-2 TSP of Vanilla or desired flavor. Mix with a mixer until the liquid is absorbed.
Sift the lumps out of your powered sugar then slowly add 2 cups of it to the Crisco mix while your mixer is on. Continue mixing until all powdered sugar is mixed in well. It will stick to your beaters! Just lift up the beaters while on low to get the icing off.
If this isn't enough icing, double the recipe. It took a lot (3 batches actually) for me to cover the cake so you wouldn't see the colors.
Putting It Together
Let both cakes cool before you do anything!
Take the first layer out of the pan and place onto a plate. Add a layer of icing on top. Then take the second layer out of the other pan and place on top of that. Add icing to top and sides of cake.
Refrigerate leftover icing, especially if you used milk.
