yelleena. This was an Australia Day Breakfast for my household. We had traditional savoury french toast, scrambled eggs of various mixtures and these yummy French Crumpets. Our chickens have been good to us these last couple of weeks so we had some two dozen eggs waiting to be used up so some got cooked up into a delicious breakfast.
Ingredients
1 tsp oil
2 tsp margarine or butter
1 tsp garlic butter
3 crumpets
3 eggs
2 tbsp milk
1 tsp mixed herb and garlic seasoning (or other herbs etc of your choice)
Salt and pepper to taste
1 diced tomato
½ cup grated cheese of your choice
Extra oil or margarine may be required for scramble
Method
Place the oil, marg and garlic butter into the skillet (total fats and oil should be about 1 tbsp)
Heat skillet or frypan to mid heat (5) about 150º degrees Celsius
Beat the eggs milk herbs, seasoning, salt and pepper together
Lightly coat each crumpet in the egg mix by dipping them in the egg mix
Put them into the pan flat side first
Brown well, turn over and brown the other side
Plate the crumpets
Grease the skillet or pan again if necessary
Pour in egg mix then top with tomato and cheese
Stir the mix until the eggs firm up into a scramble then serve with crumpets.
