Toasted Pepitas and Sun Flower Seeds
Pepitas or Dried Green Hulled Pumpkin (or Squash) Seeds are especially delicious when roasted or toasted but can be eaten raw and are just as yummy. They are particularly an excellent source of iron and good source of zinc. These are great for anyone and especially for those who are vegetarian or vegan these should be included regularly as should other nuts and seeds in the daily diet.
All varieties of pumpkin and squash seeds are edible and these seeds best served raw are great tossed in salads, mixed with grains, or ground up and added to salad dressings, casseroles, soups, and baked goods.

Sun Flower Seeds can be eaten raw or roasted and are available both hulled and unhulled. They are packed with healthy fats, proteins, fibers, minerals, vitamin E, and phytochemicals – all of which play an important part in nutritional quality of a healthy diet.

Other nuts such as pine nuts and almonds taste great both raw but their flavour is even more amazing when toasted.

TOASTED PEPITAS AND SUN FLOWER SEEDS
The image above shows the results of toasting the seeds (Showing the slight change in colour and glossiness.) on the left compared to the raw ones on the right.
Ingredients and utensils:
Frying pan (I use an electric pan on mid heat (setting 5))
Spatula or egg flip
2 tablespoons Pepitas and or hulled Sunflower seeds
Spray olive oil (optional but recommended)
Pinch of finely ground rock salt (about 1/4 teaspoon for a tablespoon of seeds) (optional)
(Regular salt and pepper, mixed herbs, garlic salt, celery salt or other seasonings can be used if desired even a few drops of soy sauce instead can be used.)
Method
1. Heat the pan to a mid heat no more than 150º degrees Celsius
2. Lightly spray the base of your pan with your choice of oil or a little heavier if it isn’t a non stick pan (no oil is required as they can be dry fried but I find a tiny bit is helpful)
3. Place your selected amount of nuts or seeds into the heated pan
4. Let them sit for about one minute then continually stir them or agitate in the pan until they develop a light brown colour and take on a slight sheen.
5. Watch your seeds and nuts carefully as once they begin to brown they will burn very quickly.
6. Turn the heat off, remove from pan and sprinkle in a pinch or two of finely ground rock salt.
You can keep them separate to just nom on, add a sprinkle of them to salads, mix them up or toss them on toast with your choice of spread.
