Scarskitsune we have the Quick version of this delightful and flavourful dish.
Well I was thinking about my Slow Cooked Chicken and some of the comments that everyone put up. Not everyone has a slow cooker, dutch oven, or Crock Pot. Or even able to cook more then 1 or two chicken breasts at a time. So I came up with a faster edition of My Recipe.
Prep = 10 to 30 minutes [again depends on how you thaw the chicken]
Cook = about 20 minutes. [isn't exhausted this time *YAY*]
ingredients
Chicken breast 1 or 2 [depends on your hunger]
Salsa
Butter/margarine
Chili Powder
Season salt
10 inch skillet
small to medium sauce pan
Prep: In your skillet spread about 1 teaspoon worth of butter, melt, and coat with season salt and chili powder. Once your chicken is thawed. You can cut into pieces or cook whole. Cut, or tenderize as desired. Place about 1/2 cup worth of salsa in bottom of sauce pan.
cooking: Over a low heat Cook chicken turning every so often. Coating each turn in chili powder. Make sure chicken is fully cooked. Once chicken is cooked; transfer to sauce pan, and cover in as desired with salsa. Cover, and cook on very low heat for about 5 minutes. Serve, and enjoy.
Optionals: as always are Sour Cream, cheese, and other side dishes. This would work great with quick rice, and microwave side rices.
