Well, I am by no means a pro photographer - I use a digital camera for these shots...
If there's a way to focus 100% manually I don't know it. But most digital cameras have landscape and macro settings (macro is usually a flower symbol and landscape a mountain). You DEFINITELY want the macro setting on!!! That way the camera will try to focus on a near object.
It can also help to hold the camera farther away and zoom in, instead of holding close and zooming out. If you're close I find things tend to be weirdly distorted even though their in focus (a slight fisheye effect)
And finally... take a lot of photos. :P I usually take like 24 at a time and most of the time there's only 4 or 5 I really like. Partly this is because I let the camera auto focus and if I'm holding the snake up like this it will /usually/ focus on the body, so that the face is blurry, rather than the other way around!
