This a rather nice chicken I made :3. I was originally intended to use chopped black olives, but seeing as the major part of this household dislikes that I used tomato instead. It was inspired by Greek cooking, thereby the name Athena's Chicken, after the Greek god :3.
For 4 persons.
Ingredients:
4 Chickenbreast filéts.
4 Streaks of bacon
1 Tomato
200g of Feta cheese
2dl of lemonjuice
1 tbsp of ground blackpepper
How to:
1. Pre-heat the oven to 200C/392F/473K and grease up a tin.
2. Cut thin slices of the feta cheese and cut the tomato into four pieces and then cut thin slices of the tomato.
3. Make deep cuts into the filets and put one or two slices of the thinly sliced tomato into the cut, then put in the thin slice of feta cheese.
4. Wrap the bacon around the filét and put the chicken in the tin.
5. Drizzle the lemonjuice over the filéts and then sprinkle ground blackpepper ontop.
6. Bake it in the oven for 30-35 minutes.
With the leftover bacon, slices of tomato and feta cheese, I wrapped a streak of bacon around a slice of tomato and feta cheese and let it bake along in the oven :P. I served this with chips and a bearnaise sauce :3. It turned out rather well.
