Those who know me IRL know that I love to bake- cookies being my specialty.
TODAY I AM FINALLY GOING TO SHARE MY RECIPE.
I wrote this recipe last year and have been perfecting it ever since. I made these ones this morning and thought to myself I've finally got it exactly the way I want them- crispy on the outside, chewy and gooey in the middle.
Prep time: 5-10 minutes
Bake time: 8-12 minutes
Only one bowl needed for preparation of dough
Cookie dough ingredients:
1 and 1/3 cups white flour
2 cups white sugar
1 large egg
1 tbsp gourmet vanilla
2 tbsp molasses
2/3 cup margarine or butter (or cannibutter if you're so inclined)
1 tsp salt
1 tsp baking soda
1 heaping tbsp cinnamon and a PINCH of cloves <--secret ingredients
Tasty extras: 1 cup chopped pecans, and 1 1/2 cups semisweet chocolate chips
Directions
Step one: Preheat oven to 375 F. I use convection for my cookies.
Step two: While oven preheats, cream together butter, sugar, egg, molasses and vanilla in a LARGE mixing bowl.
Step three: Mix in salt and soda. (and secret ingredients.)
Step four: SLOWLY add flour to the mixture until just slightly sticky. The stickier the dough, the crunchier your cookies will be. A more floury dough means a softer but more cake-like cookie (less gooeyness in the center)
Step five: Add chopped pecans and chocolate chips, mix so each piece is evenly spread through dough.
Step six: Roll dough into golfball sized balls and lay 2 inches apart on a parchment paper lined cookie sheet. (This means you don't have to wash the baking sheet! Yess!) This will generally take two cookie sheets. I like to flatten the balls slightly with the palm of my hand.
Step six: Place in fully preheated oven and bake until cookies are browned on the edges and slightly pale in the center (not shiny; you still want it to be baked) Smaller cookies will bake faster- check after 8 minutes, but these large cookies were baked in 11 minutes.
Step seven: Remove from oven and allow to cool for around five minutes. Then pour yourself a nice cold glass of milk and chow down! :) Cookies will stay chewy in the center even if left on the counter for a couple of days- but chances are they're not going to be around that long! Enjoy!
