This happened once or twice, but not critically, I just had to redo a small area on figures. I bake figures in stages so that i can't be afraid for already finished elements. After baking, figures are strong enough, besides, I try to make an additional frame of steel wire for protruding elements
And for all the time working with raw polymer clay, my left hand got used to holding figure tightly so as not to accidentally lose the time spent on work x)

Hmm, maybe just need more practice, as far as I know, Citadel is very high-quality, but they are made with an eye on the Warhammer audience. You can try popular line "Model Color" or "Game Color" from Vallejo, from AK-interactive I used line "3rd Generation". There is also Green Stuff World, but I used only varnish from them
