Pastblast: This was an illustration for Marsha's 2007 Historical Treats calendar. The illustration accompanied the recipe for "Payn Ragoun," a Medieval sweet somewhat like peanut brittle.
This recipe is similar to one called "How To Make A Confection From Pine-Nut Kernels," which appeared in a cookbook by - believe it or not - Nostradamus.

"Payne Ragoun" comes from the 1390 manuscript "Forme of Cury", and one of the translations of the recipe reads:
" take up a drope therof with thy fyngur and do it in a litel water and loke if it hong togydre" --- which is most certainly the soft-crack test you are referring to.
However, since our bear chef (and Marsha) have absolutely no intention of dipping a finger into boiling sugar syrup, they decided to use an anachronistic candy thermometer!
