Ingredients:
Baguette
Olive oil
Rosemary
Tarragon
Basil
Black Pepper
Soft Goat Cheese (I recommend Grey Owl from Quebec or Caprino)
Duxelles
Prosciutto
Method:
Preheat Oven to 380F
Slice the baguette at an angle, creating long, thin slices, about ten centimetres (about three and a half inches). Arrange the slices on a parchment lined baking tray. Mix the herbs and pepper into the olive oil and brush the bread slices with the mixture. Set in the oven on a middle rack and bake, checking at least every two minutes to test the bread. It will toast but be incredibly careful to not let it burn. Once sufficiently toasted and firm, remove from the oven and allow to cool.
Spread a layer of the goat cheese on the crudites, followed by a layer of duxelles and, finally, top with a roll of prosciutto (or a rose if you can manage it, though I find them really annoying to try and make)
Serve immediately
