I have a variant recipe here for small-batch brownies. The original recipe called for half an egg and I was like, 'No.'. :/
So, you start with a little skillet (I think mine is six inches) or a bigger skillet if you double this, which you can. :)
1/2 tsp vanilla
1 and 1/2 TBS coconut flour
3 TBS cocoa powder
3 TBS sugar (white) (the recipe I modified called for 5 TBS of sugar... If they aren't sweet enough you can adjust next time.)
2 TBS coconut oil (solid) (or 3 TBS of butter- room temp)
2 and 1/2 tbs milk (around that, anyway)
aaand a big handful of chocolate chips, you can play with what type you use. <3 I like semi-sweet or dark.
You let it cook for about 20 minutes at 350(F). c:
You can experiment with how you make these; I find it best to cream the flour, fat, and liquid first so that the coconut flour can get fluffy and absorb some moisture. You can alter this as you need. I almost never make two brownies the same. I almost never measure my vanilla or the milk I add. So, play with it and enjoy! Let me know how yours turn out.
