What would be the best way to end the 2021 Cake Challenge? Maybe with a wedding cake? Something with a mirror glaze? Perhaps a recipe beloved by a homicidal AI? In thinking about this question, the kitchens of Full Moon Cuisine came to a realization. It's the holidays, we've all lived in our kitchens for days if not weeks. So how about we come up with a recipe that will be simple to make, capture flavors of the season and be a real crowd pleaser? To this end, eggnog makes a wonderful drink and a great ingredient in baked goods. And it's about time it took front and center in cake. And the best part? This is one of the easiest to make cakes from the year!
Here's what you'll need:
- 3 cups all-purpose flour
- 3 cups sugar
- 1 cup butter (2 sticks at room temperature)
- 6 large eggs
- 1 cup eggnog
- 1 tbsp vanilla
- Pinch of nutmeg and salt
Preheat your oven to 325°F and grease and lightly flour a Bundt pan. In the bowl of a stand mixer, cream together the butter and sugar for about 2 minutes. Next, with the mixer on low, add in each egg, one at a time, until fully combined and then add the vanilla extract. Next you're going to incorporate the flour and eggnog in alternating amounts. Start with the flour and add 1/3, then add 1/2 of the eggnog. Repeat this process until you add the final third of flour. Finally, sprinkle in a pinch of nutmeg and salt. Spoon your mixture into the prepared Bundt pan and bake for 1 hour and 15 minutes. I would recommend you start checking for doneness at the 1 hour mark, then check every five minutes (it may take up to 1 hour and 25 minutes). When done, remove from the oven and allow to cool in its pan for 20 minutes before turning out onto a wire rack to cool completely.
And since it's the holidays, why stop at just cake when we can take the flavor a little over the top? Time to add some more holiday cheer in the form of an eggnog glaze!
Here's what you'll need:
- 1 cup confectioners' sugar
- 5 tbsp eggnog
In a small mixing bowl combine the sugar and eggnog and stir. You may need a bit more eggnog or sugar to have a proper glaze consistency. You'll know it's ready when it forms a ribbon when drizzled back into the bowl. Gently pour the glaze over the cooled cake and consider a gentle sprinkling of cinnamon over the top (to take it fully over the top).
After the endless activity of the holiday season, having a simple, tasty cake ready to serve with ingredients you still have left over in your fridge is a great solution for entertaining. The cake has a wonderfully crisp outer layer and a buttery taste besides the wonderful eggnog flavors. And the glaze just helps take the cake to the next level.
