There is nothing better on a cold day then a nice big pot of home made vegetable soup. *its a very cheap way to eat. You make a big pot of soup and it will last you a few weeks.*

*(please keep in mind that this recipe is getting cooked in a very large stock pot so you may need to adjust the amounts if you are using a smaller pot.if you do cook this amour of soup you will be able to feed a larger family of your self for 2 or three weeks. if you are like me and live by your self I like freeze the soup and just take what I need.)(This soup took me about 9 hours to make it.)
Stock
Ingredients
1 turkey bones
1 duck bones
1 onion
2 stocks of celery cut in half
the green of 2 leeks
2 carrots cut in half
about tea spoon of salt
8 cloves of garlic crushed
about a tea spoon of thyme
5 bay leaves
Directions:
Fill a large pot full of cold water then add the vegetables, bones and garlic as well as add the dash of salt and thyme. Next turn stove on high until the pot comes to a rolling boil then let the stock boil for half an hour then turn the stove down to med and then let the stock cook for 3 hours. once stock is done drain stock through a strainer and if you have the time put stock in the fridge over night will help get the fat out. if not you can use the stock right away.

vegetable oil
4 onions cut in to small pieces
7 stock of celery cut in to small pieces
8 cloves of garlic crushed up and chopped up fine
the white part of the leaks cut in to small pieces
6 Jalapeno peppers take the seeds out and cut in to small pieces
(if you don't like the heat of hot peppers you don't need to add)
1 large pack of mushrooms cut in to quarters
1 Butternut Squash pealed and cut in to small pieces
2 heads of Broccoli cut in to small pieces
5 parsnips pealed and cut in to small pieces
5 carrots pealed and cut in to small pieces
4 beets pealed and cut in to small pieces (on a side note when you work with beets the juice will get on every thing and its hard to get out.)
4 table spoons of grated ginger
1 bag of soup mix beans. Which is a bag of mixed dried bean. And all i do is empty the bag in to a bowl and cover with water and let sit over night in the fridge and the next day drain the water off and the beans will be nice and soft ready to cook with.
half a head of cabbage cut in to small pieces
1 small box of okra thawed in the microwave for a few sec then cut in to small pieces
2 large bags of kale
1 box of spinach which i just rinsed and dump in to the pot.
spices you may need to adjust the amounts of spice to you taste.
1 tbs basil
half a tbs of black pepper
1 tbs parsley
half a tbs sea salt
6 packs of chicken bouillon
the following spices are all pre mixed spice from a company called Club House
1 tbs tex mex spices
1 tbs piri piri spices
1 tbs lemon & herbs
1 tbs greek spices
1 tbs old bay
old bay is not from the club house company but pretty sure you can buy it any where.
Soup Direction
Set the soup pot on the stove and add some vegetable oil to the bottom of the pot and turn the stove on high. Next add the following vegetables onion, celery, garlic, leeks, Jalapeno peppers, mushrooms, Butternut Squash, Broccoli, parsnips, carrots, beets. let the vegetables cook until the vegetables start to give off there juices and get a little soft. Next turn the stove down to low and pour in the home made stock as well as the graded ginger, bag of soup mix beans, cabbage, okra, kale and spinach. Give a few minutes to cook then add the spices and taste and adjust as needed. Cook until the carrots or any other of the hard vegetable are done. (don't forget to keep stirring the soup so it does not burn.
