I made some changes to their recipe, so here's my version (* indicates a changed ingredient)
Makes about 6 servings.
Ingredients:
1 Pound Idaho Potatoes, peeled and chunked (turned out to be two large potatoes)
1 Pound ground hamburger*
1 Large onion, diced
1 Green pepper, diced
1 28oz can sliced Tomatoes*
1 16oz can Red Kidney Beans, drained & rinsed
1 tsp. minced Garlic*
2 tbsp. Chili powder
1/2 tsp. Salt
Sprinkle of Parsley
Cooking oil
1 cup water
Directions:
Step 1: Place garlic, onions, pepper and some oil in 3+ quart saucepan and cook on med/high heat for several minutes, or until peppers and onions are soft.
Step 2: Add hamburger, continue cooking until the hamburger is no longer pink.
Step 3: Stir in remaining ingredients.
Step 4: Bring to boil, then reduce heat and cover. Simmer for about 30 minutes or until the potatoes are done.
Top with shredded cheddar cheese and enjoy!
