Cook at 350•F until internal temp reaches desired temp! I take mine out at 125•F and let rest for 20 mins. I like mine medium rare.

From Chris: It is worth mentioning that you should season the roast thoroughly with salt and pepper (on all sides) and also coat the rib roast with at least 2 tablespoons extra virgin olive oil to prevent the roast from drying out.
Resting is VERY important as well to a meat like this, because if you were to cut and serve this as is, you would lose all of the juicy goodness that is still in the meat! So be patient!!!
