Well, this is the start of some recipes that I have from the fresh blueberries I picked yesterday :3
2 cups Jiffy pancake mix (you could probably make your own with 2 cups flour, 1 tsp salt, 1 1/2 tsp baking powder and 1 tsp baking soda, sifted)
2 eggs
1 1/14 cups milk (if lactose intolerant, soy or almond milk works just as well)
capful of vanilla (1 teaspoon)
1/2 teaspoon cinnamon (optional, but I find that it 'boosts' the flavor of the blueberries without adding extra sugar - and you really won't need it anyway)
1 heaping cup of blueberries, washed and de-stemmed (also had a few leftover blackberries, threw those in)
2 teaspoons vegetable oil (or any other 'light' oil will work)
1 - 2 teaspoons butter for pan
Just get a big bowl and put in your pancake mix - add in your eggs, vanilla, milk, oil and spices - and whisk well.
If it is too thick just add in a few more teaspoons of milk gradually to get to your desired thickness.
(Remember kids, its much easier to add, than 'subtract', so you really dont want an over watered batter!)
~ Here I have also seen folks add in ricotta cheese, or sour cream, or even cottage cheese as well but that depends on the type of pancake that you are looking to make. (and some go even further, by putting in lemon zest as well)
Gently fold in your blueberries and you are done with the mix, and then...
Heat a large skillet and get it very hot, add in your butter to keep the pancakes from sticking...
You want to make your pancakes in small batches - and when you see those air bubbles all come up in your pancake, thats when its time to flip. The first ones will never come up right, but thats fine since they're going to be eaten anyway :P
You'll have enough for 12 - 15 pancakes, plus that one big MEGApancake™ that will be very delicious with butter and syrup on it!
