Okay NOW I can post a recipe I made myself! This is egg drop soup, but I altered it to have an egg salad taste to it! I don't have exact measurements since I just threw together however much seemed appropriate but it's pretty easy to figure out. This is the last recipe I have to post up, I don't know when I'll get to cook something new again but I'll be sure to update here when I do!
Ingredients:
Chicken Broth
Soy Sauce
Eggs
Diced Pickles
Diced Water Chestnuts
Chopped Leaks
Paprika (Smoked Paprika works even better!)
Pepper to taste
Egg drop soup is pretty simple to make, so if you find a recipe that adds something like carrots to it, you can work off of that with this recipe to make an egg salad drop soup, the pickles give it a nice little sour crunch that tastes great with the eggs!
From Chris: Egg drop soup is simple to make, but, to make it more faithful to the traditional Chinese style - add a 1 tsp toasted sesame oil, a slurry with 1 tablespoon cornstarch to thicken, along with a dash of white pepper and a (drained) can of those baby corns :B
