Fine Fritatta for a feast from the kitchens of rockitfox

serves 3

1/2 cup chopped ham
1/2 medium sized onion
4 large eggs (beaten)
1/2 cup shredded cheese

brown the ham and onions in a cast iron skillet in a little bit of oil until the onions are golden brown. spread the onion and ham mixture evenly on the bottom of the pan and pour in the eggs. top with the cheese and stick under the broiler in the oven on high until the cheese is lightly browned. remove from the oven, cut into 6 pieces and serve.
