This is something I whipped up today that turned out better than I expected (despite it being slightly overcooked).
Grilled Chicken Pizzette
For 2 servings
Ingredients:
2 slices pocketless pita bread
1½ TBSP olive oil
5 oz. grilled chicken, cut into small chunks
¼ c. chopped onion
¾ tsp. minced garlic, equivalent to about one small clove
2 large slices of tomato
½ to ¾ c. blend of shredded provolone, Parmesan, and asiago
Your favorite Italian herbs to taste, such as oregano, parsley, basil, and thyme
Instructions:
1. Preheat oven to 400°F. Heat 1 TBSP of olive oil in a saucepan over medium heat. Place the pita bread on a baking sheet and brush with the remaining olive oil.
2. Lightly brown chicken, onion, and garlic in the olive oil in your saucepan for about 60 to 90 seconds, remove from heat, and carefully arrange on the brushed pita bread as toppings.
3. Cut tomato slices into smaller chunks and arrange as toppings. Top with the shredded cheese blend, then finish with your herbs.
4. Bake for 15-18 minutes, or until cheese has melted and just started to brown at the tips. Cut each pizzetta into quarters and enjoy!
