Dip into this heavenly cheesy dish from the kitchens of kajitorataotsu

I had fallen back on my "recipe-a-week" rule and decided to go for some easy comfort foods. This hit just the right spot and is easy, quick, and very yummeh <3
Queso Blanco
Ingredients:
-1 tablespoon olive oil
-1/4 cup diced white onion (used yellow instead)
-1 medium jalapeño, diced
-1 medium poblano pepper, diced (the poblano we got was Big, and didn't know what it usually was, so only used half of it. Up to you)
-10 ounces white American cheese, shredded (find this cheese at the deli counter)(didn't think about this, and just got mozzarella instead, still came out great)
-6 ounces Pepper Jack cheese, shredded
-1/2 cup milk
-1/3 cup freshly chopped cilantro (This is a LOT of cilantro, decided to used dried instead and only put in maybe half a tbsp.)
-1 roma tomato, seeds removed and diced (seeding optional)
-Couple sprinkles of smoked paprika
Directions:
1. Heat olive oil in a medium sauce pan over medium-high heat. Cook the onion and jalapeño pepper until softened and reduce heat to medium-low. Stir in the poblano pepper. Add the shredded cheese and milk. Stir until mostly melted.
2. Stir in the tomatoes, smoked paprika, and chopped cilantro. Serve with chips immediately.
Like I said above the recipe, this is a quick and easy dip to make, and pretty flavorful. The original recipe did not call for paprika, but at first taste, the queso needed something, and the paprika did just that. Gives a nice light spice at the beginning and melds into the peppers.

In the picture the cheese looks yellow, but I always thought that traditionally queso "blanco" was white. I'm guessing I'm mistaken...I hear just plain "Queso" or "Chili con queso" to refer to the yellow ones most often. I am not a chef and know little more about food than how to eat it if it's in front of me xD
