Hey everyone~
My long break with my having my son is finally over~
Its time to get back into cooking delicious food for you~
Ingredients:
2 Tbs Olive Oil
4 Medium to Russet potatoes
1/2 cup Baby Spinach
1 cup Vegetable Broth
1/2 cup Almond Milk
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 tsp Black Pepper
1/4 tsp Paprika
For the Mushrooms:
1/2 Cup Baby Bella mushrooms (sliced)
1 Tbs Olive Oil
Salt and Pepper, to taste
Instructions:
Add the oil, potatoes, spinach, garlic powder, onion powder, black pepper, and paprika to crockpot
Mix well
Cover and cook on HIGH for 5 hours
When the crockpot is almost done heat up a pan to medium and add the olive oil and mushrooms to it.
Cook until mushrooms are tender to touch
Drain the potatoes.
Then mash them until there are no lumps
Put on plate and put mushrooms over top!
