I haven't uploaded a new recipe since 2017. Well it's that time of year again so it's due time to make some festive treats! I love caramel apples, but they always end up hurting my teeth. So I thought of a way to recreate them in pie form. Not the first to come up with the idea, but here's my take on it.
What You'll Need:
-2 ripe apples (any apples will do, I used classic red delicious)
-1/2 stick of butter
-1/2 cup of brown sugar
-cinnamon
-1 ready made pie tin crust
-1 bag of caramel bits (These are super easy to find this time of year usually in the baking section)
-1 package of snickerdoodle cookie mix (I used Betty Crocker. Cheap and easy to make. You'll also need all of it's needed ingredients of course)
Step 1:
Preheat the oven to 375 degrees, then start by washing and chopping the apples into bite sized pieces (getting rid of the pits and stems of course). Next, melt the butter in a medium sized skillet, adding the apples, brown sugar, and a few dashes of cinnamon. Mix well for about 5 minutes, we're not trying to cook them all the way through, just soften the apples up a bit and letting the butter and brown sugar meld together into an almost syrup.
Step 2:
After 5 minutes or so, pour the apple mixture into the pie tin and equally distribute it as best you can trying to get a flat surface. Next, add the entire bag of caramel bits to the the top of the apples. (That's the way I did it anyway, but it didn't turn out as efficiently as I'd hoped it would. The bits melted, but not all the way, so if you want an even coating, I'd recommend placing the bits in a cup in the microwave to melt them down and then pour them across the apples, but it's entirely up to you.) Set aside for now.
Step 3:
Next thing is to make the snikerdoodles. This will act as your pie crust shell. Combine the ingredients until you have a nice cookie dough, but instead of making individual cookies, we're basically making one giant one. Place the dough atop the pie forming as equal of a layer as you possibly can. I'd recommend neading the dough with your hands piece by piece until you cover the entire base of the pie until you've run out of dough. Snickerdoodles will usually come with an additional cinnamon sugar packet. Now is the time to use it once your dough shell has been formed. Equally distribute the sugar across the top. (I only used half of it, but use as much as you'd like.)
Step 4:
Place in the oven for 20 to 25 minutes. The cookie shell will come up over the pie just a bit. If the dough looks under-baked, that's okay, the shell will harden as it cools, plus you want a soft crust to cut through. Serve with a scoop of vanilla ice cream and you've got the perfect caramel apple you'll ever eat. Enjoy!
