Hear is A Barbecued duck I just finished. Its just how I like it nice and crispy on the out side and nice and moist on the inside. Not much to say other then I just sprinkled the fallowing spices Old bay,tex mex and lemon& herbs onto the inside and out side and then just Barbecued until it was done. It may look a little black but it was still very moist and good.

Duck has a lot of fat under the skin, which can make the skin blacken much more easily than other poultry. Luckily, all that fat will keep the meat lovely and moist even if the skin crisps a bit much.
