In further fleshing out my theory, if indeed Souffle had been the one working on the drug, and Gem had somehow gotten ahold of it and ingested it, and Child Protective Services had been called in, Gem would have been put in Foster Care, as she has related.
She wasn't adopted. That's important, since if she had been adopted, her last name would have changed. So, I have to assume that Polson is Souffle's last name, as well as Nicole's. They would probably have lost contact with her when she was put into Foster Care, and maybe for a very long time afterwards. But, when the news story came on about "Gemma Polson" in the court room, it might be really hard to miss the fact that a person with the name of YOUR missing daughter just showed up on the news. Furthermore, since we have to assume that she was taken to a hospital in the same city as she lived in (which isn't the real life case, based on the location of Dr. Kitsune's office, which is real, and the location of the hospital, which is real. Dr. Kitsune's office is in London, the hospital is in Scotland), it's reasonable to assume that Souffle was working there, so that's how he got to her room. It also explains why Paul thought the way he did about him. Souffle WAS worried about HIS daughter. RIghtfully so.

I have a theory here. Smokey guy and all the others are ghosts, Gemma's not-father went completely batshit and torched their house with her, his brother, and Gemma's mom and siblings inside, but got caught in the blaze himself and thats why he and grub are all burned up. The others all died and Gemma is the only survivor, hence why she's an orphan. She doesn't consciously remember it because she was too little to, but she remembers it in her dreams which unfortunately is also where her not-father can go all Freddy Kreuger on her.
Gemma is basically being haunted by his ghost and the ghosts of her mom, siblings, and actual father are trying to protect her from him, though they're not as strong as he is so they can't just all gang up on him and drive him off.

But this raises several questions. First the same question as on the last page: Is Jack really evl or does Gem just think he is based on childhood memories and a pretty messed up mind? Or was he evil and reformed himself or is he just playing? Is evil "burnt face" Jack just a imagination of Gem? Perhaps based on a childhood trauma she links to him? (if he really caused it or not is another question)
Second: Why does he have Grub? As a trophy witch I personaly doubt alot. Or did he suffer the same loses as Gem did and keeps Grub as a reminder of it?
Third: Why would he give Grub back to Gem and how did he reconice her? Last question you could explain with her night terrors where she probaly screams a lot. Assuming hes really a doctor (because of the coat he didnt wore in Gems "dream" and wouldnt easily get as an patient (nearly impossible you might guess)) he probaly gave it to her because he knew it was hers. But why would he have it at work.
Fourth: Does he really work at this place? As we recollect it was once stated that he worked in a lab where they tried to find a cure for alzheimer. Such a guy wouldnt really work in a mental hospital. So does he really work there? As we also recollect the incident witch brought Gem into the mental hospital made it into the news reports: Did he reconized her there and sneaked his way into the hospital to see her? (in witch intention is another question)
Fifth: What we can believe what Gems "dreams" say to us? Yes I know they are really real dreams almost supernatural but can we really trust them? I mean they are literaly inside the head of a mental case (a very nice mental case but a mental case non the less) so you can doubt their credibility. Is Jack evil? Has Jack really a twin or does this just represent two sides of the same person. Does gems brian try to protect her with that what someone else or even she herself did in her early childhood by recreating a easier to accept story to a trauma. (I mean burn face Jack is a pretty clear villain witch is easier to comprehend than a more complex answer. This is actually how most Dissociative identity disorders are created a trauma a person cant mentally comprehend so the subconcines creates another story around it. In most cases: that didnt happened to me it happened to another person. Or more likley in this case: I didnt do anything it was uncle Jack or My daddy didnt do anything it was my "uncle Jack" (going with my theory that the twin part didnt exist) ) Just look of what Gems mental doctor said in Page 257 witch could be very true but instead of a current dilama with a very early one. So is Jack just a Metaphor for a trauma in her early childhood. (I call big fire witch destroyed her family )

If you look on the page when jack gave Grub to Gemma, he had both of his eyes, and his one antenna wasn't broken. Now it is.
So, is Jack real, or a figment of Gemma's imagination? Did she imagine Grub being all new and fluffy when Jack gave it to her, and now she sees it as it is, a little rumpled and futzy.

I think Souffle brought grub to her, and fully knows who she is. The dream she had about Jack is her own mind still working to try and remember what happened, also probably a representation of a repressed emotional projection of Jack. There were real binding ties to the dream two pages ago. The fact that she felt her hands being restrained in the dream, she probably "felt" the presence of someone in the room, and she woke up to find grub actually was there as he was in the dream. Dreams can often be reactive to actual sensation, such as experiencing falling in a dream and rolling out of bed in real life. I don't think Jack was real in the dream a few pages ago, but I could be wrong of course. Either way, I think her nightmares are going to get worse as we build up to her discovery of what happened all those years ago during her infancy. But the house is burned and Jack's face is disfigured, so I think we can already vaguely infer at this point what happened.
I wonder how Pual is going to take that statement. It certianly raises all sorts of questions for Pual to ask himself as, where did the toy come from? Why did she think he couldn't see it? Why is it so beat up? Really throws some questions at the its all in her head notions since she is strapped down in bed again.
I think Sammy needs to start a 'Guess the Ending of Found' Journal where we can all put our ideas about how all of this came about, how it started and how it ends.
I am, by trade, and electronics technician. I troubleshoot to the component level and repair electronic circuitry. Much of this is done by test equipment and schematics, and 90% of the time is pretty straight forward. The OTHER ten percent of the time, you have to work it backwards.
Maybe we need to work this in the opposite direction.
We've assumed that there is Jack and Souffle, and now Jack is the evil monster. He was working on a cure of dementia. Remember, this all comes to Gemma from her dreams and in that particular dream, it was Jack telling it.
Now, one of my favorite plot twists was that Jack was somehow injected, ingested or otherwise poisoned with the drug, and that's why he because the raving maniacal person of Gemmas dreams.
In the previous page, Souffle is apparently overly sorry to Paul about what has happened to Gemma, possibly even a guilt trip, Paul might think.
Jack gave Gemma a perfectly intact Grub, but, the one Paul sees is missing an eye and a broken antennae, something you would expect on an almost 40 year old toy (it was ZeeZee's to begin with). I don't think that's an oversight on our artist's part, I think it's VERY intentional.
So, let's go about this the 'other way.'
Jack doesn't exist, indeed, he IS a figment of Gemma's imagination. He never has.
Souffle was the scientist/doctor that came up with the drug.
Somehow GEMMA got ahold of the drug and ingested it.
She was rushed to the hospital and was forcibly taken from Souffle and Nicole by Child Protective Services because they felt that Souffle had been negligent in allowing her to get anywhere near the drug in the first place, although it WAS an accident.
She ended up in several foster care families and orphanages over the course of her developmental career.
The drug has always had an effect on her, although she may not realize it. What that effect is, I do not know at this time.
It is unlikely that Dr. Kitsune knew any of this, records might have been sealed (with a kiss).
It IS possible that the proxasin triggered a psychotic effect since the original drug would have already done some amount of damage to Gem. This might have resulted in a sort of Deja Vu of the court scene. Maybe she was there the whole time, and when she thought she was having a dream, it was a millisecond delay in memory integration, and she was in the court room the whole time.
Souffle has been working at the mental hospital, never expecting to see Gemma come in there. Since Gemma has had to create something of an evil persona to explain why she's been taken away from her family, she created Jack, as she said, a figment of her imagination. However, Souffle, actually being her father, brought her Grub, having had it stashed away as a memory of the loss of his daughter, taken from him because of an oversight on his part. When she did come in, of course, he brought her Grub, and in her state, she confused him for Jack. Souffle, of course, seeing that she was having nightmares, applied the restraints, just as he told Paul, but Gemma saw Jack.
As to Nicole, ZeeZee and Rasile, Nicole is still married to Souffle, she always was, and will be joining Souffle at the end of the story as he explains to Gem what happened to her, and how sorry he is. ZeeZee and Rasile should show up about the same time to show support for their beloved, and long missing, baby sister.

We don't KNOW, there's nothing to indicate that her family is dead. Also, we know her old home is dark, dank and maybe some ash, but we really don't KNOW if there was a fire or not. ZeeZee had to slap Gem to wake her up from her dream so she wouldn't be there. That's a bit unnerving in the telling of the tale.

Gemma is obviously VERY intelligent, and her sanity shows through in her job as a Solicitor. Look back at page 3, when she's at her desk. She has a PhD. I don't think it's possible to get to achieve a Doctorate of Law if you're insane, which is what you're implying.
Furthermore, she's seen Dr. Kitsune before, although we don't know why. Why WAS she seeing him? He's a professional Mental Health Professional, if indeed Gemma was insane, she most likely would have been committed to a Mental Health Facility at an earlier stage in life.
No, I still believe that somehow, and I don't know exactly how, Gem got a hold of the Dementia drug that Souffle, not Jack, was working on, and it got into her system. That's why she was put into Foster Care. We've seen that Nicole has gone back and retrieved Gem after giving her up for adoption, so we're pretty sure that Nicole would not do it intentionally, but if Gem was taken by the state for her 'own protection' then Nicole would not be allowed to see her. It actually would be Nicole breaking the law to see her, as there might be a court order against it. Of course, as an adult, that court order would have expired or been vacated.
Next, is 'Polson' Souffle's, and Nicole's last name? I must assume it is, because she wasn't adopted. She was just placed in Foster Care. Hence, she would retain her own legal name. So, if Nicole or Souffle saw the news program on her being taken to the hospital, it makes sense that they could put two and two together and come up with 'Hey, that's my lost daughter!'
I still don't understand the dreams with Zee Zee and Rasile and how they can communicate with her adult side, particularly the slap from ZeeZee to force her to wake up from her dream where he's under the table in the dark house. But, I assume at some point that will be made clear, at least I hope, because that's a sticking point with me.
So, no, I don't think Gemma is insane, I don't think she's ever been insane, and I don't think she's going to go insane. I DO think she somehow got ahold of the drug Souffle was working on, and it did something to her mind, but not to the point of insanity.
Funny thing, in looking back at the pages to answer this, on page 93, Sam said she FINALLY had gotten to the first plot twist, which was the dark house. She said she hadn't expected it to take that long to get there, and she figured she was going to have another 100 pages to go before the story ended. THAT would have been 150 pages AGO! Then, recently, she said another 35 pages. I'm expecting closer to 70-80.

I keep wondering if the two people in your comic are one person divided into two personalities. Not necessarily Dissociative Identity Disorder, but perhaps extreme bipolar.... One gentle and loving and kind and protective, the other cold and harsh and cruel... You'd maybe think a person like that would never be able to become a doctor..... Yeah... You'd think that c.c..
So someone once said there is no devil, just god when he's drunk. It's not uncommon for a child to kind of imagine a parent who varies from abusive behavior to warm and loving behavior as being kind of two different people. Kind of... Good daddy and bad daddy...

Come to think of it, while Grub's clearly not in tip-top shape, he doesn't seem nearly as mangled up as he was in the dark place.
