...Please feel free to ignore the Potato Gnocchi on the side there, that's premade :P
Ingredients:
2 salmon steaks
8 slices uncured BACON
2 tablespoons pure Maple Syrup (used Grade "A", but you can use darker)
1 tsp cumin
1 tsp smoked paprika
salt and ground Schezuan peppercorns
(some recipes call for either fresh lemon, which is fine, or tarragon wrapped inside - I didn't do this, but dont let me stop you if you want to use either!)
Its VERY easy to make -
With the salmon steaks, just give them a quick rub of your fingers to check for any bones, and pull them out...
Then liberally rub both sides of the salmon with the spices (you can let this rest in the fridge to get more flavor out from the spices...about 4-6 hours, covered)
Get a baking sheet, cover with non-stick foil...then put the bacon down first...
Then put on the salmon...and cover with said BACON...
Then drizzle the maple syrup over it and cook in your oven at 375 F for about 25 minutes or until fish is fully pink :3
...I would NOT recommend broiling the fish at a higher temp to crisp the bacon on the fish - only because, while I did do that, I almost caused a fire in my oven XD!!! (Maple syrup does not go well with high temps, I learned this the hard way!)
Luckily, I took it out before it got too crispy and it was very tasty, which is what counts!
