The biggest I've done so far was about five feet tall. (For quadrupeds, I've done an anthro pony-ish thing that was taller.)

Chrysalis is actually my biggest quadruped so far. http://www.furaffinity.net/view/11781617/ (Though I want to improve on that version, it had problems.)

Stupid question but if it was one of the floppy versions (i.e. one that didn't have to stand up) could there be more holes in the legs?

Yep :3 If it doesn't have to stand it frees up things a bit. (Though that picture doesn't show the holes well, there are three in each leg, they're just black on black and hard to see since the angle isn't quite right.)
