Garlic Rice
2 Tbs butter
2 Tbs minced garlic
2 cups long-grain rice
4 cups chicken broth
Salt, to taste
Freshly ground black pepper, to taste
1. Heat the butter in a large skillet and saute the garlic and rice, stirring constantly, until lightly brown.
2. Add the chicken broth, salt, and pepper and stir. Bring to a boil, then reduce heat to simmer, cover, and cook for 20 minutes.
Corn and Broccoli Medley
1 slice bacon, chopped (I used turkey bacon here)
1 small yellow onion, chopped
1 small potato, peeled and cut into 1/2-inch cubes
1/2 cup milk
1/8 tsp black pepper
3 cups broccoli florets (1 small head)
1 1/4 cups whole kernel corn
1. In a skillet, cook the bacon over low heat until it begins to brown -about 3 minutes. Add the onion, cover, and cook over moderately low heat for 5 minutes.
2. Add the potato, 1/4 cup of the milk, and the pepper; cover and cook until the potato is almost tender-about 7 minutes. Add the broccoli and the remaining 1/4 cup milk and cook, uncovered, 5 minutes longer. Add the corn and cook for 3 minutes or until it is heated through.
For crab legs, just cook in boiling water in stockpot with your choice of seasonings for about 5 minutes. And serve it all with butter ^_^
