A very tasty dish from

This was something my host-mother used to cook for me regularly during my semester in Spain. It usually has green and red bell peppers as well, but I omitted them for my mate.
Ingredients:
Olive oil
Minced garlic
Boneless, skinless chicken thighs cut into bite sized pieces
An onion, thinly sliced.
Diced green and red bell peppers.
White wine.
In a frying pan, add some olive oil and minced garlic. Heat to a simmer. Add the chicken and optional peppers. Add a splash of white wine. Once the chicken starts to change color, add the onion. Salt to taste. Saute until chicken is cooked. Serve with bread and/or rice.
One of the best parts of this dish is dipping the bread into the sauce.
Start with a large frying pan with some olive oil. Add about a table spoon of minced garlic.
*From Chris: I would have to say that if this was cooked at a simmer, cooking time would take about 15 - 20 minutes...unless the chicken thighs were pounded flat like 'piccata' / 'schnitzel' / etc. in which case it might be shorter :B
