Do you like your cupcakes dense, moist and delicious? This banana cupcake recipe will turn out a tender little cake full of banana flavor, with a sweet and cinnamon-y Biscoff/speculoos frosting on top. Bet you can't eat just one!
Ingredients
for the cupcakes:
1 1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1 1/2 cups mashed bananas
2 large eggs
1/2 teaspoon pure vanilla extract
for the frosting:
3/4 cup Biscoff spread
1 stick unsalted butter
3 tablespoons milk
1/2 teaspoon vanilla extract
1 1/2 cups powdered sugar
Directions:
Preheat the oven to 350 degrees and line a cupcake tray with papers.
In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt. Make a small hole in the center of the flour mixture with your fist; add the butter, mashed banana, eggs, and vanilla to this hole and stir gently until just incorporated. Use a ladle to spoon equal amounts of the batter into twelve cupcake papers.
Bake for 25 - 30 minutes (mine took about 27), until a toothpick comes out clean and your whole kitchen smells like banana bread.
As the cupcakes cool, whip together the Biscoff, butter, milk, and vanilla. Once fully incorporated, add the powdered sugar 1/2 cup at a time, mixing on high speed until the frosting reaches a fluffy consistency.
Frost your cakes and enjoy!
