I see no reason not to partake in the fine cuisine provided by those stalls, since they are gracious enough to share they're wares at such a reasonable price. And would it not be insulting to then simply ignore them, after they had taken the time to prepare that food, and set up those stalls, They are only trying to make a living, so I say go nuts! You get to enjoy some delicious local food, and you are, at the same time, helping to stimulate the local economy and pay for those dutiful and diligent stall vendors to continue to provide that generous service so that none may go hungry, in the streets of that wonderful city.
TLDR; Eat, get fat, and be merry, because your helping people by doing so.
