Here's the spectacular dessert we made for my D&D group yesterday! I made the cheesecake and a whipped cream topping to coat it with, then
cth topped it with strawberries and kiwis for me while I prepped to run the game. :)
1 1/3 cups graham and/or cookie crumbs
1/4 cup melted butter
4 packages cream cheese
1 cup cup white sugar
2/3 cup sour cream
2 tbs flour or tapioca flour
2 tsp vanilla extract
4 eggs
1 package white chocolate chips
1/2 cup cream

Mix butter and crumbs, and press into the bottom of a springform pan.
Mix together cream cheese, sugar, sour cream, flour, vanilla, and eggs.
Preheat oven to 325. Put a baking dish filled with water on the lower rack to create a steam bath; the top rack will be for the cheesecake.
In a double boiler melt white chocolate into the cream.
Pour white chocolate mixture into the batter mixture in a thin stream, mixing continuously.
Pour batter mixture into pan and bake for an hour.
Crack oven door and let cool for an hour before putting in fridge. Chill in fridge to set before removing from pan.
The steam bath should prevent the cheesecake from cracking. If it still does, any cracks should be minor and you should be able to hide them easily by coating the cheesecake with sweet whipped cream and topping however you please. :)

Is this comment facetious? With the exception of the giant Costco tubs of cream cheese, and mini tubs of cream cheese "spread" which aren't intended for cooking use, every single package of cream cheese I have ever seen for sale anywhere in my entire life, from any brand or manufacturer, has been exactly the same: a standardized brick of about 8 ounces / 225-250 grams.
