So I decided to make a whole bunch of little things to take in for my work colleagues which meant I made a red velvet devils' choc cake pops, added red & white jelly beans, cinnamon hearts & Hershey's Kisses to little bags.
The recipe I used was this:
Ingredients:
1 1/2 cups cake flour
1/2 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, softened
1 1/2 cups sugar
3 large eggs
1 1/2 teaspoons vanilla extract
1 teaspoon red food coloring
2 tablespoons choc frosting
Cake Pop sticks
Cake Pop coating:
Wilton/Merton's Melts
Sprinkles
Method:
1. Preheat the oven to 350°F. Coat two round 9-inch cake pans with cooking spray then lightly dust with some flour.
2. For cake, sift together, twice, the flour, cocoa powder, baking powder, baking soda, and salt in a large bowl.
3. In a large bowl with an electric mixer, beat the butter and sugar on high speed until light and fluffy, 2 to 3 minutes. Beat in the eggs, one at time, scraping down the bowl in between. Beat in the vanilla and food coloring until well-combined.
4. With the mixer on low speed, beat in the flour mixture until well-combined. Divide the batter between the two baking pans.
5. Bake on the center rack of the oven until a toothpick inserted into the center comes out clean, 22 to 25 minutes. Cool the cakes in the pans on a wire rack for 10 minutes. Turn the cakes out onto the wire rack and cool completely, about 1 hour.
6. Break the cake up into crumbs then add roughly 2 tablespoons of choc frosting, stir in then mix by hand until it just starts to combine.
7. Take small blobs of the mixture & roll into balls, place into the freezer for approx 15 mins.
8. Put melts into a cup in the microwave for approx 30secs (be very careful they burn easy so after 30 secs do in 5 second increments & stir each time to be sure they do not burn)
9. Dip sticks into the melts then place into the cake pops, about half way in, put them into styrofoam or a cake pop holder once done
10. Once all the cake pops have a stick in them, place them into the fridge for a few mins to make sure the stick is secure.
11. Melt more melts in the microwave then dip each cake pop & rotate until entire cake pop is covered
12. If desired you can add sprinkles but must be quick as the melted stuff dries very quickly.
13. Place into small bags or into a styrofoam block in whatever you'd like to present the cake pops in
