Traditional Three Cheese Chicken Pasta Casserole
(Spring cannot get here fast enough for some of us Furs who enjoy warmer weather. I’m going to have some nice hot, old fashion Chicken Pasta Casserole that’ll warm me right up on those snowy days. Then Imma sleep! Wake me when its Spring. Zzzzzzzzzzz)
**Medium Difficulty**
Serves 6 to 8
1 lbs Skinless Chicken Breasts, chopped into bite size pieces
12 oz Whole Grain Penne Pasta (1 box)
8 oz regular Cream Cheese (1 pack)
2 cups Mozzarella Cheese, shredded
2 Tbsp Olive Oil
1 cup Onion, chopped
3 Tbsp fresh Garlic, minced
3 ½ Tbsp fresh Oregano, minced
4 Tbsp fresh Basil, minced
4 Tbsp fresh Parsley, minced
3 cups Whole Milk
1 Tbsp All-Purpose Flour
½ Tbsp ground White Pepper
1 cup grated Parmesan Cheese
1 ½ cup Pangko crumbs
Pinch of Sugar
Salt to taste
1.) Boil Whole Grain Penne Pasta in a pot of hot water, then set the Pasta aside to drain in a colander.
2.) In a large pot set at medium high heat, add in Olive Oil, Garlic, and Onions, and sauté until lightly browned. Then add in chopped Chicken Breasts and cook the meat all the way through while stirring frequently. Once Chicken is cooked, add in Flour and stir to coat all the meat lightly. Cook until lightly golden as well.
3.) Reduce heat to medium low and pour in Milk. Stir while adding in Cream Cheese, and Mozzarella Cheese. Mix until the cheese melts gently. If the mixture is too thick for your liking, you can add in a little bit more Milk.
4.) Add in White Pepper, Oregano, Basil, Parsley, a Pinch of Sugar, and stir gently to mix. Add in the Whole Grain Penne Pasta from earlier and mix thoroughly. Add enough Salt to your desired taste. More salt for those who prefer salty foods, and less Salt for those who like the seasoning to be more delicate.
5.) Pour Pasta mixture into a large casserole dish, but be careful. Contents will be hot. Sprinkle a layer of Pangko bread crumbs over the top of the casserole, then sprinkle on another layer of grated Parmesan Cheese. Turn on the Broiler and place the Casserole Dish under it for about 2 minutes while keeping an eye on it so it doesn’t burn. If you have a powerful Broiler, less time may be needed. For an older/weaker Broiler model, an extra 2 minutes or so may be needed.
6.) Carefully remove the casserole dish when the top is a beautiful golden brown. Sprinkle on some minced Parsley and serve. Enjoy!

There is nothing more traditional than a casserole in my house while growing up. My mother loved the oven, and Casseroles were her go to choice when feeding a family of four. She worked a lot, and didn't have time to cook long elaborate meals, so this method really helped her make sure there was good food on the table for a reasonable amount of time and effort.
You may have noticed I used Whole Grain Pasta. That’s not because I am trying to be healthier. I just like the taste of Whole Grain Pasta. This Three Cheese Casserole, like a lot of foods that has the “Three Cheese” title on it, is definitely a comfort food. It’s warm, gooey, rich, and meaty. It’ll be a great one dish meal for any family. I labelled this recipe on a Medium Difficulty only for the fact a Broiler is involved. A lot of people have never used the Broiler setting on their oven before so it may be a new experience. However, if you are comfortable with your broil, then this recipe will be simple, and no fuss at all. Except for the clean up. Be sure to wash everything right away so it doesn’t dry up and be caked onto your pots and utensils!
You can easily use regular white flour pasta if you like. And you can easily try to make a healthier version of this Three Cheese Casserole by getting light Cream Cheese, Low fat Mozzarella and Parmesan, and non-fat Milk. But, for me personally, comfort foods should have a bit of guilt in them. Makes it all that much sweeter. ;3 Happy eating!
