A tribute to the king of rock and roll from the kitchens of

Elvis loved his banana, peanut butter and bacon sandwiches.... and i live in Belgium (chocolate country)
I decided to try to make chocolate and banana cupcakes, topped with a creamy peanut butter frosting and sprinkled with bacon.
They're rich and yummy, a little over the top, and just like Elvis ;)
Was my participation to this year's New Year buffet:)
RECIPE:
For the chocolate Banana cupcakes (ingredients list):
2 cups all-purpose flour
1 cup sugar
1/2 cup baking cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 1/4 cups nonfat milk
1 cup banana, mashed
3 tablespoons canola oil
1 teaspoon vanilla extract
Bits of sun-dried banana "chips"
Instructions:
In a bowl, combine dry ingredients. In another bowl, combine eggs, milk, banana, oil and vanilla. Stir into dry ingredients just until moistened.
Coat muffin cups with nonstick spray. Fill 3/4 full. Bake at 375 degrees for 18-20 minutes or until a toothpick comes out clean. Cool 5 minutes before removing to cool on wire racks.
For Peanut Butter cream cheese frosting (ingredients list):
1/2 cup creamy peanut butter (I used creamy Jif peanut butter)
1-8 oz package cream cheese, softened (I used Neufchatel cheese)
1-1/2 cups powdered sugar, sifted
1 tsp vanilla extract
Instructions:
Mix all together, put in a decoration pouch and put on top of the cooled cupcakes.
Finally:
Sprinkle the top with bacon, cooked and cooled, cut into lil bits (i dried mine on some absorbant paper to remove the excess fat)
