We had a big move, so this is my first homecooked meal in 6 months. It tastes so good. 6 months ago I would have complained about another stir fry, but gah. I made it with an electric skillet I got for Christmas. The knob you see in the photo is to a burner set in a kitchenette that we have in this weekly rate motel, but if you try to turn it on, it smokes, so we don't use it.
Ingredients
1 Idaho Potato
1 Green Pepper
1 Chicken Breast
1/4 Onion
1 Small Can Cream of Chicken Soup
Minute White Rice
Seasoning (I purchased pre-seasoned chicken)
(Serves approximately 3, prep time about 1 hour)
Instructions
1. Dice potato, onion, chicken and green pepper. (I cubed it in the picture and it took far longer to cook that way.) Add to skillet, turn onto medium and let cook, stirring occasionally.
2. Prepare 1 cup of Minute rice according to instructions (the box I have says 1 cup rice, 1 cup water, 6 minutes in the microwave, covered.)
3. About halfway through frying, add teriyaki basting sauce/glaze (it's thicker.)
4. Cook half the can of Cream of Chicken soup - if using the microwave, about a minute and a half should do it. With soup that needs water, only use a quarter of the can to make the soup thicker to sit on the rice better.
5. Spread rice between bowls, cover evenly with soup.
6. When finished, place stir fry over rice.
7. Enjoy!
