...Rice and Sausage Cuban Style

Here is a golden feast lay upon soft succulant rice from the kitchens of

I present to thee, Cuban poor people food!!
This is one of those cuban or puuerto rican foods that you wontfind in a restaurant because its made at home. Its poor people food, right up there with Arrozy Huevo Frito (rice and fried egg). its Quick, cheap, and beyond easy to make and not to mention FUCKING DELICIOUS.
The main ingredient is Vienna Sausages...if you like viennas, youre going to adore this dish.
Heres what you will need:
~4-5 cans of ARMOUR or LIBBYS Vienna Sausage (any other brand dont taste right...)
~ Sazon Goya (GOYA brand seasoning packets)
~ GOYA Sazon Completa (Goya brand Complete seasoning. If you cant find Goya complete seasoning, you may use Garlic pepper or Garlic and Herb seasoning)
~1 bag of Honey Golden Potatoes or Yellow Potatoes
~1 can of sweet corn (optional)*
~1 can tomato sauce
~Half a can of Tomato Paste
~White rice
Preparation:
~Cook the white rice and have it ready
~Spray down a large pan with nonstick cooking spray (the potatoes like to stick)
~add the full can of tomato sauce and about half a can of tomato paste (or a little more if you like the sauce thick like I do)
~Add half a can of water to the sauce, followed by seanoning. You may season to taste or keep it simple by adding 2 packets of sazon goya and sprinkle complete seasoning over the top. You may add more later if you feel it needs it.
~ Slice the potatoes into fours. add as many as you like or as little as you like. Make sure to rinse them after cutting them!
~turn the heat up to mid-high, cover, andlet it cook for 20 minutes. Stir occassionally to avoid the potatoes making sweet love to the pan.
~After about 20 minutes, taste the potatoes to make sure theyre cooked enough. they should be soft with a little crunch.
~once the potatoes are ready, its time to add the sausages. DO NOT DRAIN THE BROTH! it gets cooked in with everything! so just open up thecan and dump that bitch in, broth and all.
~Cover again and let it cook for an extra 10 minutes, or until the sausages are nice and plump from the sauce, stirring occasionally
Make sure to taste the sauce occasionally! If you think its too heavy in tomato flavor, add 1 more packet of Sazon and another sprinkle of complete seasoning. Keep doing so until you feel the flavors are well balanced. This Dish is very customizable so to speak...it always varies depending on the cooks personal taste and never actually follows a set flavor recipe, although the ingredients are always the same! thats what makes it so amazing!
Once youredone, serve over white rice and enjoy! if the sausages fall apart on contact, you did it right :D
** about the corn. Corn adds a sweet flavor ontop of the tomato that most people tend to like. if youre feeling adventurous, add the can of sweet corn with the water to the tomato sauce mix at the beginning but LEAVE OUT the can of regular water...otherwise itll be too soupy.
so there you have it! Like I said,the great thing about this dish is its flavor can vary every single time depending on your personal preferences with the seasoning. i like it pretty heavily seasoned myself, enough that the tomato is just a sweet undertone to the seasonings.
