Beautiful work, RogueLiger. Generally, a picture of a rider and mount tends to have some flaw in it -- the rider’s balance seems off, his anatomy is awkward or his mount’s anatomy/balance or face is flawed. However, you have succeeded on all points. The rider is balanced perfectly, his anatomy is spot on and his mount is likewise superbly done -- with an excellent face. Definitely A+ work.
Horses have a few different gaits that you can feel as you ride. You want to sit or stand in the stirrups differently depending on the gait. And as for the horse getting out of control, it can be scary if you aren't experienced, but the best thing to do is pull back hard on the reins. The pain the bit will cause forces them to slow down and stop. Nevertheless, riding can be a ton of fun once you get familiar with it, and with the horse. Horses have their own personality and can be quite affectionate or rambunctious, etc...

I don't have a lot of experience myself. Just enough that I was able to thoroughly enjoy a two day horseback riding trip through the Texas desert this October.
Any place that offers horseback riding trails will have a variety of horses that are suited to different skill levels (including none). If you are more serious, you can always look for a place that does training although that would be a good bit more expensive.
But I assure you that seeing the world from the back of a horse is a reward in itself.
