Such a wonderfully flavoured and coloured soup from the kitchens of

I had all these Apples and Carrots sitting here, and I didn’t know what to do with them. Solution! Make Soup.
3 Large Carrots
3 Apples
3 Cups Chicken Stock
1 TBSP Curry Powder
1 Tsp Sage
1 Tsp Rosemary
1 Clove Garlic
1 TBSP sugar
Peel carots and peel and core apples. Chop them into small pieces, and place in a pot. Cover with chicken stock and boil for about 30 minutes until the carrots are tender. Place the mixture in a blender, or food processor. And pure until almost smooth. Transfer back into the pot, and add the spices. Simmer for another 20 minutes to let the flavors mingle. Salt and pepper to taste. Garnish with sliced green onion.
