...More like broiled, but a latke is a latke dammit :P
What you need:
The other 1/2 of a humongous zucchini, shredded (from this recipe actually - http://www.furaffinity.net/view/8941971/)
2 potatoes, shredded
1 small onion, finely chopped
1/2 of a shallot also finely chopped
2 to 3 large eggs
1/4 cup matzo meal (if you want to go gluten free, Id recommend gluten free flour, or pancake mix, or even coconut flour/rice flour/potato starch flour)
salt and pepper to taste
First, you need to put in the elbow grease and shred up that 1/2 of a zucchini and potatoes. Once theyre all shredded, put into a colander, and press down HARD - you want to get rid of ALL the excess water and juice thats naturally inside potatoes and zucchinis.
Once drained, put into a large bowl then chop up the onion and shallot finely. Then, crack open three eggs and put into the bowl, then the 1/4 cup matzo meal and stir well.

That I had saved the pan oils (there was at least a good two or three tablespoons of olive oil left from the roasted zucchini)...if you forgot to do that and had thrown the oil out...shame on you... >_<
But if nothing else you can still add a bit more oil IF you've already drained the pan. Get your oven to 'Broil' or, if you do not have a broil function on your oven - get it on to at least 475 to 500 F.
Form loose zucchini balls and then place on your oiled pan, put on your bottom rack and let it get to a nice golden brown (about 30 minutes but no more!)- I'd also recommend flipping them over at a halfway point to make sure both sides brown evenly.
Then when you take them out, toss a bit of salt and pepper on them, serve with sour cream or apple sauce or etc :)
